Seed Bars
These beautiful, slightly sweet (but not too sweet!) seed bars are a delicious little lunch box filler. They are packed full of nutrition and store well in the freezer, so they're great to make ahead and pull out as needed.
Ingredients:
1/2 cup / 70g sunflower seeds
1/2 cup / 70g pumpkin seeds
1/2 cup / 70g sesame seeds
1/2 cup / 50g desiccated coconut
2 Tbs / 10g chia seeds 2 Tbs honey 2 Tbs Tahini
2 Tbs water
Directions:
Preheat oven to 180 degrees on fan bake
1. Blend ingredients on speed 5 for 10 seconds in the Thermomix. If using a food processor, process until mixture is crumbly but coarse.
2. Press into a square or rectangle tray greased with coconut oil or lined with baking paper (approximately 1/1.5cm thick). Cut into rectangles before baking for around 20 minutes or until lightly golden.
