Fudgy Paleo Brownie
I have been experimenting with a fudgy chocolate brownie that is super chocolatey, rich and slightly gooey (but not too gooey) that can be made with or without chocolate depending on the occasion. I find it pretty frustrating that most paleo chocolate brownie recipes contain dark chocolate (perhaps there is paleo chocolate available in other countries?) when chocolate is not something I tolerate a lot of. I can have dark occasionally and I'm not going to lie, it does lift this brownie to next level decadent (I've made this with dark chocolate several times)!
If you are using a Thermomix you can pop the chocolate in whole pieces and it will easily blend into the mixture. If you are using another appliance, you may need to blend or process the chocolate separately before you start until it resembles bread crumbs (unless you prefer chunks of chocolate, which is also completely acceptable!).
Ingredients:
1 cup dried dates, soaked in boiling water for 10 minutes
1 cup or 100gm almond meal
1/2 cup or 50gm tapioca flour
1/2 cup or 50gm raw cacao powder or cocoa powder
1/2 tsp baking soda
1 tsp apple cider vinegar
1 tsp vanilla
1/2 or 100gm cup coconut oil
3 large / 4 small eggs
A pinch of salt
Optional: 50 - 100gm dairy free dark chocolate, broken into pieces
Directions:
Preheat oven to 160 degrees
1. Soak dates in boiling water for 10 minutes or so then drain the water
2. Add all ingredients into Thermomix or blender (I usually squeeze the dates to ensure there are no pips) and blend on high speed until blended (40 seconds on speed 10 is using a Thermomix)
3. Grease a square tin with coconut oil and line with baking paper. Spread mixture in the tin and cook for 14 - 16 minutes until cooked to your liking.
