Black Bean Lunchbox Brownie


I love Sunday baking sessions, especially when they are super speedy and productive! This black bean brownie is a firm fave for our boys and best of all, is super easy to whip up a batch for the freezer to pull out for lunch boxes!

Ingredients:

1 cup loosely packed dried dates

1 can of black beans (make sure they don't contain salt!)

3 eggs

125gms light olive or melted coconut oil

25gms / 1 Tbs vanilla

Pinch of mineral or sea salt

35gms / 1/3 cup raw cacao powder

3gms baking soda

5gms apple cider vinegar

5gms / 1 Tbs psyllium husk (optional)

Directions:

Preheat oven to 160 degrees on fan bake

1. Soak dates in boiling water for a few minutes

2. Rinse beans in a colander or the Thermomix simmering basket

3. Add all ingredients to a Thermomix or blender, then add softened dates (making sure there are no pips!)

4. Blend until smooth (use the blend setting on a TM6 for 30 seconds)

5. Bake in a tray lined with baking paper for approximately 20 minutes (or less for a more fudgey texture)
