Sesame Crackers
I'm not going to lie, there are healthier crackers out there (i.e. flourless)...but sometimes you just need an easy to make, super delish sesame cracker that is a crowd pleaser!
These are naturally nut, egg, dairy & gluten free, so a great wee kindy / school lunchbox filler + snack to have at home. A batch usually lasts us the week, and I usually throw another measure of dry ingredients in a container for the following week so it's ready to go. You just never know what life will throw at you with two busy boys around the house!
Ingredients:
1/2 cup sesame seeds
1/2 cup blonde linseed (flaxseeds)
1 cup organic buckwheat flour
1/4 cup coconut oil
3/4 cup water
1 tsp salt
4 cloves garlic (optional)
Handful of rosemary or thyme
Directions:
Preheat oven to 180 degrees on fan bake.
1. Whizz dry ingredients in the food processor for about a minute.
2. Add wet ingredients and whizz until combined (another minute or so).
3. Allow to stand for at least 8 minutes, then divide into two balls and roll out thinly between two sheets of baking paper / silicone mats and score into rectangles using a knife or pizza cutter.
4. Bake on two trays for around 18 - 20 minutes, until slightly golden and crunchy.
