Quick Caramel Hearts

Sometimes you just need a little fix. Stat.

We are now two months into 2018 and instead of buying into the whole "New Year, New You' ordeal, I have been a little too kind to myself and am still indulging! Cooper has recently weaned which has allowed me to include nuts into my diet again and be a lot more relaxed in my food life.

I have plenty of other goals on the go at the moment, including drinking loads more water and working on my sleep. I've downloaded a couple of great apps to help with these - one to track how much water I drink during the day and another to listen to guided sleep meditation tracks as I drift off to sleep. Both of them are amazing by the way - I would highly recommend them!

Anyway, if you are feeling like a little quick fix, these simple little raw treats can be whipped up in no time and easily made with or without sweetener.

Ingredients:

Caramel Layer

2 Tbs Coconut oil (melted / soft)

2 Tbs Almond butter

A good pinch of salt

1 Tsp Coconut cream

A little sweetener if you wish - 1 tsp honey / coconut sugar etc

Chocolate layer

3 Tbs Coconut Oil

1 Tbs Raw Cacao Powder

2 Tbs sweetener (rice syrup dissolves the best but honey would also be fine)

1 tsp vanilla

Directions:

Caramel layer

1. Mix ingredients together and half fill silicone moulds, then put in the freezer.

Chocolate layer

1. Gently melt coconut oil and sweetener, then whisk ingredients together.

2. Pour over caramel layer and set in the freezer.
