Salted Caramel Balls


Yesterday was pet day at our local school and Finn's kindy had a lovely little visit down to see them. Fridays are usually a busy day for us; I usually have a LOT of house work to catch up on but I decided to leave the house 'as is' and venture out. I am so glad we did...it was so nice to get out in the sunshine with my gorgeous boys and they were in their element seeing the various animals the school children had bought along. It absolutely fills me with joy seeing the connection Finn has with his teachers and peers at kindy and we feel incredibly lucky to be a part of such a beautiful little community.

One of his amazing teachers mentioned she is looking for a bliss ball recipe and one of her favourite flavours is salted caramel. So we have whipped up these tasty little morsels for her, which may or may not make it to kindy next week depending on our self control...

Ingredients:

Dry ingredients:

2 cups organic desiccated coconut

1/2 cup sunflower seeds (or almonds / pecans for a real treat)

2 Tbs chia seeds

1/2 tsp Himalayan salt

Wet ingredients:

1 cup dates (either medjool or dried dates soaked in boiling water for 10 minutes - strain well after soaking)

1 Tbs coconut oil or butter

2 Tbs almond butter

2 tsp pure vanilla extract

Method:

1. Blend dry ingredients together in a food processor for a couple of minutes until crumbly-ish

2. Add wet ingredients and blend until the mixture forms a ball (like a dough). Press together to check consistency - if it is too squishy and won't hold together in a solid ball very well, add a little more coconut (1/4 cup at a time) until the consistency is just right.

3. Roll into balls and coat in coconut if you wish.
