*The* Raw Chocolate Fudge
Chocolate Fudge. Need I say more?
Rich, velvety, delectable chocolate fudge. Is this even possible without the traditional butter, cream, sugar and more sugar? YES!
Unfortunately Finn and I made this together. I mean, it was a nice activity to do....but it meant I could not keep this delicious little creation all to my chocolate loving self! Haha, just kidding, I do love baking with my favourite wee 4 year old. He is a great helper when it comes to licking the spoon...and bowl...then smearing chocolate all over his little brother's face as he tries to give him a tiny taste <3
I have been in search of the ultimate fudge recipe for quite some time now, and I finally feel like I have found *The* fudge recipe that ticks all the boxes for me - obviously gluten, dairy, refined sugar free etc, but the texture is absolutely divine, it is bittersweet and so rich I only need a little square. I hope you enjoy it as much as we do...
Ingredients:
1 cup dates, soaked in boiling water for at least 5 minutes
1/2 cup coconut oil
1 Tbs vanilla
A generous pinch of salt
1/4 cup raw cacao powder
1/2 cup of chilled coconut cream
Coconut sugar for sprinkling (and to sweeten the fudge if desired)
Method:
1. Blend soft dates, coconut oil, vanilla, salt and raw cacao powder until completely smooth.
2. Add chilled coconut cream and blend until emulsified. Have a wee taste and sweeten with coconut sugar if you would like it sweeter.
3. Spread into a silicone loaf tin or similar container, then set in the fridge or freezer.
Store in the fridge or freezer...this fudge is best served from the fridge but can easily be frozen if you don't demolish it straight away.
